Potato Patties

This is one of those simple dishes that just tastes so good and it’s perfect as a starter or as a light lunch. As with most of my recipes you can customise this to your own tastes by adding different vegetables and herbs.

  • 450 g potatoes peeled and cubed
  • 1 onion finely diced
  • 1 pepper finely diced
  • 2 teaspoons coriander leaf
  • salt and pepper for seasoning
  • 1 teaspoon garlic paste
  • 1/2 teaspoon ground cumin
  • 1 tablespoon grated dairy free cheese optional
  • 3 tablespoons gluten free plain flour


  • Place the cubed potatoes in a large pan of salted water
  • Bring to the boil and then simmer for 15 minutes or until tender
  • Drain the potatoes then return them to the pan
  • Cook on a low heat for 1 minute, this dries out the potatoes
  • Mash the potatoes
  • Stir in the onion, peppers, coriander, seasoning, garlic, cumin, cheese and flour
  • Form into small patties using about 1 tablespoon of mixture
  • Chill in the fridge for 30 minutes
  • Add a drizzle of olive oil in a shallow pan over a medium heat
  • Cook the patties for 2 minutes on each side or until golden and crisp
  • Serve immediately with a crisp salad
