Baked Potato Slices

  • 1 large baking potato
  • drizzle of olive oil
  • salt and pepper for seasoning
  • 40 g dairy free cheese grated
  • 40 g pancetta cubed
  • 1 tsp chives chopped
  • 1 tbsp mayo double check it is dairy free


  • Place the pancetta in small pan and fry until golden, about 5 minutes
  • Set aside
  • Preheat the oven to 180 oC
  • Slice the potato into 1/2cm slices and place on a baking sheet
  • Drizzle with olive oil and season with salt and pepper
  • Bake for 20 minutes
  • Remove from the oven and top with the dairy free cheese and pancetta
  • Bake for another 10 minutes
  • Serve topped with a little blob of mayo and a sprinkle of chives
