Toffee Apple Cider Cake

  • 2 eating apples peeled and finely chopped
  • 100 g sultanas
  • 450 g gluten free self-raising flour
  • 1 tsp ground cinnamon optional
  • 200 g brown sugar
  • 225 g dairy free spread
  • 1 egg beaten
  • 200 ml toffee apple cider
  • icing sugar for dusting


  • Preheat the oven to 160 oC
  • Grease a bundt cake pan or 8" round cake tin
  • Place the flour in a large bowl and stir in the ground cinamon and brown sugar
  • Rub in the dairy free spread until it resembles breadcrumbs
  • Stir in the chopped apples, sultanas, beaten egg and toffee apple cider
  • Pour into the cake tin and bake for 90 minutes
  • Remove from the oven and allow to cool in the tin for 10 minutes
  • Remove from the tin and allow to cool completely
  • Dust with icing sugar prior to serving
