Pulled Pork Mac & Cheese

  • 200 g gluten free pasta
  • 2 garlic cloves minced
  • 1/2 green pepper diced
  • 1 small onion diced
  • 200 ml dairy free cream
  • large handful of dairy free cheese
  • large handful of spinach
  • salt and pepper for seasoning
  • 200 g bbq pulled pork *


  • Cook the gluten free pasta per the instructions on the packet
  • Heat a drizzle of olive oil in a large shallow pan
  • Stir in the garlic cloves, onion and pepper
  • Sauté for 5 minutes
  • Pour in the cream and simmer for a couple of minutes
  • Season with salt and pepper
  • Stir in the grated cheese and spinach
  • Cook for another minute
  • Stir in the cooked pasta and serve topped with warm bbq pulled pork
