Broccoli Bacon Mac & Cheese

  • 150 g gluten free pasta
  • 2 tbsps dairy free spread
  • 2 tbsps gluten free plain flour
  • 470 ml dairy free milk
  • 40 g dairy free cheese grated
  • 4 slices smoked bacon chopped
  • 1/2 small broccoli cut into small florets
  • 1 small onion diced
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • salt and pepper for seasoning


  • Preheat the oven to 180 oC
  • Cook the pasta per the instructions on the packet and set aside
  • Place the olive oil in a shallow pan over a medium heat
  • Add the smoked bacon, brocolli, onion and garlic
  • Saute for about 7 minutes or until the bacon is crisp and the broccoli tender
  • Set aside
  • Make the cheese sauce by placing the dairy free spread into a pan over a medium heat
  • Stir in the gluten free flour until it forms a smooth paste
  • Gradually pour in the dairy free milk and stir continuously until the sauce comes to the boil
  • Stir in 2/3 of the dairy free cheese and season with salt and pepper
  • Mix together the broccoli, cooked pasta and cheese sauce
  • Pour into a casserole dish and top with the remaining cheese
  • Bake for 20 minutes
