Egg and Avocado Pittas

  • 2 gluten free pitta breads
  • handful of salad leaves
  • 3 eggs
  • 1 ripe avocado
  • 3 spring onions finely sliced
  • 1 teaspoon lemon juice
  • salt and pepper for seasoning


  • Place the eggs in a pan of boiling water
  • Boil for 10 minutes
  • Place the eggs in a bowl of cold water, peel the eggs and chop roughly
  • Remove the peel and stone from the avocado and mash
  • Add the lemon juice to the mashed avocado
  • Mix together the egg, avocado and spring onions
  • Grill the pitta breads for a minute on each side
  • Fill with the salad leaves and egg mix
