Place the eggs in a pan of boiling water
Boil for 10 minutes
Place the eggs in a bowl of cold water, peel the eggs and chop roughly
Remove the peel and stone from the avocado and mash
Add the lemon juice to the mashed avocado
Mix together the egg, avocado and spring onions
Grill the pitta breads for a minute on each side
Fill with the salad leaves and egg mix
