Chicken, Tomato and Spinach Pasta

  • 200 g gluten free pasta
  • 1 chicken breast cut into chunks
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1 small onion diced
  • 1 tsp rosemary
  • 8 cherry tomatoes halved
  • 150 ml dairy free cream
  • 1 large handful spinach


  • Cook the pasta per the instructions on the packet and set aside
  • Place the olive oil in a shallow pan over a medium heat
  • Saute the chicken, tomato, garlic, rosemary and onion for 8 minutes
  • Stir in the dairy free cream
  • Simmer for 5 minutes
  • Stir in the spinach
  • Cook for a couple of minutes
  • Season with salt and pepper
  • Stir through the cooked pasta and serve
