  • 4 large ripe tomatoes
  • 1 medium onion diced
  • 2 teaspoons oregano
  • 1 teaspoon thyme
  • 2 teaspoons parsley
  • 1 garlic clove minced
  • salt and pepper for seasoning
  • 130 g gluten free plain flour
  • 1 tablespoon lemon juice
  • 2 tablespoons water


  • Saute the onion and garlic in a shallow pan over a medium heat until soft, about 3-5 minutes
  • Place the onion, diced, tomatoes, oregano, thyme and parsley in a large bowl
  • Season to taste
  • Stir in the flour, water and lemon juice to form a batter
  • Chill for 30 minutes in the fridge
  • Add a drizzle of olive oil to a shallow pan over a medium heat
  • Add one tablespoon of mix for each fritter into the pan
  • Cook for 2 minutes on each side, or until golden
  • Serve with a fresh salad and lemon wedge
