A perfect start to the morning, the freshness of the avocado compliments the grilled sausage, topped off with a runny poached egg and a sprinkle of chilli.




  • 2 eggs
  • 2 gluten free sausages
  • 1 avocado
  • 2 teaspoons lime juice
  • salt and pepper for seasoning
  • sprinkle of chilli flakes


  1. Grill the sausages for about 12-15 minutes
  2. Slice into thick rounds
  3. Bring a pan of water to the boil then turn down to a simmer
  4. Crack each egg into the pan and poach for 3-6 minutes depending on how runny you like your yolk
  5. Mash the avocado, stir through the lime juice and season to taste with salt and pepper
  6. Arrange the sliced sausage, avocado and poached eggs in two bowls
  7. Sprinkle with the chilli flakes
