Ingredients
- 125g gluten free self raising flour
- 1 teaspoon ground cinnamon
- 80g dairy free chocolate chips
- 150g pumpkin puree
- 30g brown sugar
- 1 egg
- 180ml dairy free milk
Method
- Whisk together the pumpkin puree, egg and dairy free milk
- In a large bowl stir together the flour, cinnamon, chocolate chips and brown sugar
- Stir in the liquid and whisk until you have a smooth batter
- Heat a drizzle of oil in a shallow pan over a medium heat
- Add tablespoons of the pancake batter and cook for a couple of minutes on each side
