Gluten & Dairy Free Peppermint Crunch Truffles
Dark chocolate minty truffles with a smooth and crunchy centre

Servings: 10 Truffles
Ingredients
- 160 g gluten and dairy free Oreo style cookies *
- 55 g dairy free cream cheese
- 100 g dairy free dark chocolate
- 30 g dairy free white chocolate
- few drops mint extract
Instructions
- Place the cookies in a blender with the dairy free cream cheese and mint extract
- Blend until it forms a soft cookie dough like consistency
- Roll into 10 small balls
- Chill in the freezer for 10 minutes
- Melt the dairy free dark chocolate and then dip each of the truffles in
- Remove them with a fork and place on a piece of parchment paper
- Return to the freezer for 10 minutes
- Melt the dairy free white chocolate and drizzle over the truffles
