Gluten & Dairy Free Peppermint Crunch Truffles

Ingredients

  • 160 g gluten and dairy free Oreo style cookies *
  • 55 g dairy free cream cheese
  • 100 g dairy free dark chocolate
  • 30 g dairy free white chocolate
  • few drops mint extract

Instructions

  • Place the cookies in a blender with the dairy free cream cheese and mint extract
  • Blend until it forms a soft cookie dough like consistency
  • Roll into 10 small balls
  • Chill in the freezer for 10 minutes
  • Melt the dairy free dark chocolate and then dip each of the truffles in
  • Remove them with a fork and place on a piece of parchment paper
  • Return to the freezer for 10 minutes
  • Melt the dairy free white chocolate and drizzle over the truffles

Notes

* I used Tesco free from sandwich creams
