  • 100 g cubed pancetta
  • 1 onion finely diced
  • 1 garlic clove minced
  • 1/4 teaspoon dried crushed chillies
  • 400 g tin chopped tomatoes
  • 1 teaspoon oregano
  • salt and pepper for seasoning
  • 200 g gluten free penne pasta cooked per instruction on the packet


  • Add the pancetta, onion, garlic and chilli to a shallow pan over a medium heat
  • Saute for 5 minutes or until the pancetta is crisp and the onion soft
  • Add the tin of tomatoes, oregano and season with salt and pepper
  • Simmer gently for 10 minutes
  • Stir in the cooked pasta and serve
