Ingredients
- 110g Dairy Free Spread
- 110g Caster Sugar
- 100g Dairy Free Chocolate Chips
- 2 eggs
- 2 Ripe Bananas
- 2 Tablespoons Peanut Butter
- 190g Gluten Free Plain Flour
- 35g Ground Almonds
- 2 Teaspoons Baking Powder
Method
- Preheat the oven to 180 oC
- Cream the dairy free spread and sugar together until light and fluffy, about three minutes
- Add the eggs, beating well between each addition
- Mash the bananas and add to the mixing bowl
- Spoon in the peanut butter
- Add in the dry ingredients and mix well
- Stir in the chocolate chips
- Line a 1lb loaf tin with baking parchment or oiled well
- Bake in the oven for 1 hour and 15 minutes
- Remove from the tin and leave to cool on a rack for an hour before slicing
