Gluten & Dairy Free Paprika Beef & Crispy Potato Bowls

Ingredients

For the beef:

  • 500 g beef strips
  • 1 onion diced
  • 1 pepper diced
  • 8 cherry tomatoes
  • 1 teaspoon oregano
  • 2 teaspoons smoked paprika
  • 2 teaspoons olive oil
  • 2 garlic cloves minced
  • 2 large handfuls of spinach

For the potatoes:

  • 400 g potatoes
  • 2 teaspoons olive oil
  • Salt and pepper for seasoning

Instructions

  • Preheat the oven to 180 oC
  • Place the cubed potatoes, olive oil and seasoning into a bowl
  • Mix until well coated
  • Spread out on a baking sheet
  • Bake in the oven for 25 minutes
  • When your potatoes have 10 minutes left to cook start making the beef
  • Add the olive oil to a pan over a medium to high heat
  • Add in the onion, peppers and garlic
  • Sauté for 5 minutes
  • Add in the beef and cherry tomatoes and cook for 3 minutes
  • Season salt and pepper and add in the oregano, smoked paprika and spinach
  • Cook for 2 minutes
  • Place the potatoes into bowls and top with the smokey beef
