  • 2 gluten free tortilla wraps
  • 2 tbsps dairy free cheese
  • 2 eggs
  • 2 tbsps salsa
  • 1 avocado sliced
  • fresh coriander
  • salt and pepper seasoning


  • Preheat the oven to 180 oC
  • Place the tortilla sheets on a lined baking sheet
  • Top with the grated dairy free cheese and make a small indent in the cheese
  • Carefully crack the egg into the middle of the cheese indent
  • Bake in the oven until the egss are set - about 10 minutes
  • Top with the salsa, avocado, fresh coriander and seasoning
