One Pot Chicken Arrabiata

Ingredients

  • 1 chicken breast diced
  • 1 pepper diced
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 red chilli diced
  • 150 g gluten free pasta
  • 250 ml passata
  • 50 ml red wine
  • 2 tsps oregano
  • salt and pepper for seasoning

Instructions

  • Pour a drizzle of olive oil in a medium sized saucepan
  • Place on a medium sized heat
  • Add in the diced chicken breast, pepper, onion, garlic and chilli
  • Saute for 5 minutes
  • Add in the pasta, passata, chicken stock, oregano, seasoning and red wine
  • Bring to the boil and simmer for 20 minutes or until the pasta is cooked
