My regular followers will know how much I love my pancakes – they are my favourite weekend treat and I love to try new flavour combinations. This weekend I’ve made mocha pancakes – chocolate pancakes with an espresso shot – what better way to start the day?




  • 90g gluten free self raising flour
  • 10g cocoa powder
  • 1 tablespoon caster sugar
  • 1 egg
  • 1 shot of espresso
  • 80ml dairy free milk


  1. In a large bowl stir together the flour, cocoa and caster sugar
  2. Whisk in the egg
  3. Gradually beat in the dairy free milk and espresso until you have a smooth pancake batter
  4. Heat a drizzle of olive oil in a shallow pan over a medium heat
  5. Split the batter into four and cook the pancakes for a couple of minutes on each side
