Description
My regular followers will know how much I love my pancakes – they are my favourite weekend treat and I love to try new flavour combinations. This weekend I’ve made mocha pancakes – chocolate pancakes with an espresso shot – what better way to start the day?

Ingredients
- 90g gluten free self raising flour
- 10g cocoa powder
- 1 tablespoon caster sugar
- 1 egg
- 1 shot of espresso
- 80ml dairy free milk
Method
- In a large bowl stir together the flour, cocoa and caster sugar
- Whisk in the egg
- Gradually beat in the dairy free milk and espresso until you have a smooth pancake batter
- Heat a drizzle of olive oil in a shallow pan over a medium heat
- Split the batter into four and cook the pancakes for a couple of minutes on each side
