Mediterranean Salmon

For the salmon:

  • 4 salmon steaks
  • 1 garlic clove minced
  • 2 teaspoons mixed herbs

For the vegetables:

  • 1 red onion
  • 1 red pepper
  • 1 yellow pepper
  • 1 courgette
  • 16 cherry tomatoes
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 garlic clove minced


To make the salmon:

  • Spread the minced garlic on the top of each of the salmon steaks
  • Sprinkle with the mixed herbs and season with salt and pepper
  • Heat a frying or griddle pan on a medium heat
  • Add a drizzle of olive oil
  • Cook the salmon steaks for 12 minutes, turning so all sides are seared

To make the vegetables:

  • Cut the vegetables into chunky strips, I tend to keep the tomatoes whole
  • Heat a drizzle of olive oil in a pan over a high heat
  • Add the garlic and the vegetables
  • Cook for 5 minutes
  • I served mine with crispy potatoes
