Hello everyone
Hope you all had a great week and have an awesome weekend planned. This recipe is another one that is perfect for those busy week nights where you can just through together a load of ingredients from the store cupboard and make a hearty meal in under 30 minutes. I had some gluten free sausages leftover in the fridge from a brunch I made for some friends who were visiting. I paired this up with a simple but tasty tomato based sauce and some gluten free spaghetti.

Ingredients
- 2 gluten free sausages, cut into thick slices
- 1 onion, finely diced
- 2 garlic cloves, minced
- 400ml tin of chopped tomatoes
- 2 teaspoons oregano
- 1 teaspoon smoked paprika
- 200ml chicken stock
- 1 teaspoon sugar
- salt and pepper for seasoning
- 200g gluten free spaghetti, cooked per instructions on the packet
Method
- Heat a drizzle of olive oil in a shallow pan over a medium heat
- Add the sausages and cook for 5 minutes
- Add the onion and garlic and cook for a further 5 minutes
- Stir in the chopped tomatoes, oregano, paprika, chicken stock and sugar
- Bring to the boil and simmer until the sauce has reduced and thickened
- Season with salt and pepper
- Stir through the cook spaghetti
