Individual Bacon & Onion Frittata

Ingredients

  • 2 tablespoons gluten free mini soup pasta
  • 2 slices smoked bacon diced
  • 1/2 onion diced
  • 1 clove of garlic crushed
  • 4 eggs
  • 1 tablespoon soya natural yoghurt
  • 1 teaspoon oregano
  • 1 tablespoon dairy free cheese grated
  • salt and pepper for seasoning
  • drizzle of olive oil

Instructions

  • Boil the soup pasta, about 6 minutes, set aside to cool
  • Preheat the oven to 180 oC
  • Grease two mini flan dishes, about 9 cm diameter
  • In a small pan, gently fry the bacon, onion and garlic for about five minutes
  • Remove from the heat and set aside
  • In a small bowl whisk together the yoghurt and eggs
  • Season with salt and pepper
  • Add the cooked pasta, bacon, onion, cheese and oregano
  • Pour the mixture into the two individual casserole dishes
  • Bake for 15 minutes or until set
