I have quite a lot of pancake recipes on my website already but since it is pancake day tomorrow I couldn’t resist adding another couple of recipes. I think it would be fair to say I’m addicted to making gluten and dairy free pancakes and have experimented with a number of toppings. I hope you enjoy this recipe and have a fab pancake day whatever you are doing!




  • 100g gluten free self raising flour
  • 1 teaspoon xanthan gum
  • 1 tablespoon caster sugar
  • 1 egg
  • 100 ml dairy free milk
  • 1 tablespoon dairy free caramel sauce (click here for recipe)
  • 1 tablespoon dairy free chocolate sauce (I used Chocshot)
  • handful of gluten and dairy free mini marshmallows (I used the Sainsbury’s from the baking section)

  1. Place the flour, xanthan gum and sugar in a large bowl
  2. Stir in the egg
  3. Add in the milk and beat until it forms a smooth thick batter
  4. Heat a drizzle of oil in frying pan over a medium heat
  5. Place tablespoons of the mixture in the pan
  6. Cook for about 2 minutes on each side
  7. Top with the marshmallows and sauces
