Ingredients
- 2 gluten free pitta breads
- handful of salad leaves
- 3 eggs
- 1 ripe avocado
- 3 spring onions finely sliced
- 1 teaspoon lemon juice
- salt and pepper for seasoning
Instructions
- Place the eggs in a pan of boiling water
- Boil for 10 minutes
- Place the eggs in a bowl of cold water, peel the eggs and chop roughly
- Remove the peel and stone from the avocado and mash
- Add the lemon juice to the mashed avocado
- Mix together the egg, avocado and spring onions
- Grill the pitta breads for a minute on each side
- Fill with the salad leaves and egg mix
