Tomato Chutney

  • 375 g cherry tomatoes halved
  • 1 red onion diced
  • 1 garlic clove crushed
  • 1/4 teaspoon chilli flakes
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 125 ml white wine vinegar
  • 150 g soft light brown sugar


  • Place the onion, tomatoes, garlic, chilli, ginger, cumin and coriander in a large pan
  • Add in the white wine vinegar and brown sugar
  • Cook on a low heat until the sugar has dissolved
  • Bring to the boil and then reduce the heat until it is simmering gently
  • Cook until the mixture reduces to a jammy consistency
  • Spoon into two small sterilised jars
