serves / makes 18 cookies


  • 110g dairy free spread
  • 50g caster sugar
  • 100g dark brown sugar
  • 1 egg
  • 170g gluten free plain flour
  • 1/2 teaspoon xanthan gum
  • 170g dairy free chocolate chips


  1. Preheat the oven to 180 oC and line two baking sheets with parchment paper
  2. Cream the dairy free spread, caster sugar and brown sugar until light and fluffy
  3. Mix in the egg
  4. Add the flour and xanthan gum and stir until well combined
  5. Stir through the chocolate chips
  6. Place teaspoons of mixture on the baking sheets, leaving room for the cookies to spread
  7. Bake in the centre of the oven for 15 minutes
  8. Allow to cool before serving
