Ingredients
- 110g dairy free spread
- 50g caster sugar
- 100g dark brown sugar
- 1 egg
- 170g gluten free plain flour
- 1/2 teaspoon xanthan gum
- 170g dairy free chocolate chips
Method
- Preheat the oven to 180 oC and line two baking sheets with parchment paper
- Cream the dairy free spread, caster sugar and brown sugar until light and fluffy
- Mix in the egg
- Add the flour and xanthan gum and stir until well combined
- Stir through the chocolate chips
- Place teaspoons of mixture on the baking sheets, leaving room for the cookies to spread
- Bake in the centre of the oven for 15 minutes
- Allow to cool before serving
