Originally I was going to make this as a marble cake but I’ve got a couple of them already on the website. As the colours are so contrasting I thought it would look cool as a layered cake. Just to make it look a little prettier, as I made this a gift for my friend who was feeling poorly, I iced mine with a little dairy free chocolate spread and a drizzle of yellow icing.




  • 110g dairy free spread
  • 200g caster sugar
  • 1 egg
  • 1 teaspoon ground cinnamon
  • 3 medium sized bananas, mashed
  • 200g gluten free self raising flour
  • 1 teaspoon xanthan gum
  • 2 tablespoons dairy free cocoa powder


  1. Preheat the oven to 180 oC
  2. Grease and line an 8″ by 8″ cake tin
  3. Cream together the dairy free spread and caster sugar
  4. Beat in the egg
  5. Stir in the cinnamon and mashed banana
  6. Mix in the flour and xanthan gum
  7. Divide the cake mixture in half
  8. Stir in the cocoa powder into one half of the mixture
  9. Pour the chocolate mix into the cake tin and top with the other half of the mix
  10. Bake in the oven for 25 minutes
  11. Remove from the cake tin and allow to cool
  12. Cut into squares
