Gluten & Dairy Free Chocolate Chip Peanut Bars

  • 6 tbsps coconut oil
  • 160 g peanut butter
  • 100 g gluten free oats
  • 60 g peanuts chopped
  • 30 g gluten free puffed rice
  • 90 g dairy free chocolate chips


  • Line an 8” by 8” cake tin with tinfoil
  • Place the coconut oil and peanut butter in a saucepan
  • Heat gently until melted and well combined
  • Pour into a large bowl and stir in the chopped peanuts, oats, puffed rice and chocolate chips
  • Press firmly into the cake tin
  • Refrigerate for 2 hours
  • Remove from the cake tin and decorate with a drizzle of dairy free chocolate and some extra chopped peanuts
  • Cut into 9 bars
