Description
I absolutely love pizza, and while I’ve found a lot of restaurants serving good gluten free bases I miss the cheese as I haven’t come across one that offers dairy free cheese yet. The gluten free bases I’ve tried have always been thin crust so I thought I would have a go at making the Chicago style deep dish pizzas.
Note: the recipe for the pizza sauce makes a lot of sauce but it is handy to keep in the freezer for future use

Ingredients
For the base:
- 180ml water, warmed in the microwave for 30 seconds
- 4g dried active yeast
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 500g gluten free bread flour
- 1 teaspoon xanthan gum
- 35g ground rice
- 60ml olive oil
For the pizza sauce:
- 1 clove of garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 2 teaspoons of sage
- 460g fresh, ripe tomatoes
- 2 x 400g tins of chopped tomatoes
- 1 teaspoon sugar
- 2 teaspoons sweet, smoked paprika
- 1/2 teaspoon salt
- 1 tablespoon balsamic vinegar black pepper, to taste
Toppings:
- handful of dairy free grated cheese
- any other toppings you wish, the choice is endless!
Method
To make the pizza dough:
- Mix the dry ingredients together in a large mixing bowl
- Stir in the olive oil and water
- Beat with a dough hook on an electric blender for 5 minutes or knead by hand
- Cover the bowl with cling film
- Leave in a warm place for one hour
For the pizza sauce:
- Place all the ingredients in a large saucepan and bring to the boil with the lid on
- Simmer the sauce for 30 minutes and then remove the lid and cook for another 30 minutes stirring occasionally
- The sauce should be thick but still juicy
- Top the pizza and freeze the rest for future pizzas
To assemble the pizza:
- Preheat the oven o 200 oC
- Split the dough in half and roll out each piece of dough to about an 8″ diameter circle
- Line 2 shallow pie tins with the dough, I used the tinfoil disposable ones
- Fill the bases with the pizza sauce, sprinkle on the grated cheese and top with whatever you fancy
- Bake in the centre of the oven for 20 minutes
- Remove from the pie dish and serve immediately
