I absolutely love pizza, and while I’ve found a lot of restaurants serving good gluten free bases I miss the cheese as I haven’t come across one that offers dairy free cheese yet. The gluten free bases I’ve tried have always been thin crust so I thought I would have a go at making the Chicago style deep dish pizzas.

Note: the recipe for the pizza sauce makes a lot of sauce but it is handy to keep in the freezer for future use




For the base:

  • 180ml water, warmed in the microwave for 30 seconds
  • 4g dried active yeast
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 500g gluten free bread flour
  • 1 teaspoon xanthan gum
  • 35g ground rice
  • 60ml olive oil

For the pizza sauce:

  • 1 clove of garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons of sage
  • 460g fresh, ripe tomatoes
  • 2 x 400g tins of chopped tomatoes
  • 1 teaspoon sugar
  • 2 teaspoons sweet, smoked paprika
  • 1/2 teaspoon salt
  • 1 tablespoon balsamic vinegar black pepper, to taste


  • handful of dairy free grated cheese
  • any other toppings you wish, the choice is endless!



To make the pizza dough:

  • Mix the dry ingredients together in a large mixing bowl
  • Stir in the olive oil and water
  • Beat with a dough hook on an electric blender for 5 minutes or knead by hand
  • Cover the bowl with cling film
  • Leave in a warm place for one hour

For the pizza sauce:

  • Place all the ingredients in a large saucepan and bring to the boil with the lid on
  • Simmer the sauce for 30 minutes and then remove the lid and cook for another 30 minutes stirring occasionally
  • The sauce should be thick but still juicy
  • Top the pizza and freeze the rest for future pizzas

To assemble the pizza:

  • Preheat the oven o 200 oC
  • Split the dough in half and roll out each piece of dough to about an 8″ diameter circle
  • Line 2 shallow pie tins with the dough, I used the tinfoil disposable ones
  • Fill the bases with the pizza sauce, sprinkle on the grated cheese and top with whatever you fancy
  • Bake in the centre of the oven for 20 minutes
  • Remove from the pie dish and serve immediately
