Tomato Bruschetta

  • 1 gluten free baguette
  • 225 g ripe tomatoes diced
  • 2 tablespoons olive oil
  • 6 basil leaves
  • 1 clove of garlic minced


  • Slice the baguette into six thick slices
  • Add the minced garlic to one tablespoon of the olive oil and drizzle over the bread on both sides
  • In a small bowl add the remaining olive oil to the chopped tomatoes and season to taste
  • Tear up the basil and stir through the tomato mix
  • Heat up a grill pan and toast the bread on both sides until golden brown
  • Top the bread with the tomato mixture
