Potato Patties
This is one of those simple dishes that just tastes so good and it’s perfect as a starter or as a light lunch. As with most of my recipes you can customise this to your own tastes by adding different vegetables and herbs.

Servings: 4 people
Ingredients
- 450 g potatoes peeled and cubed
- 1 onion finely diced
- 1 pepper finely diced
- 2 teaspoons coriander leaf
- salt and pepper for seasoning
- 1 teaspoon garlic paste
- 1/2 teaspoon ground cumin
- 1 tablespoon grated dairy free cheese optional
- 3 tablespoons gluten free plain flour
Instructions
- Place the cubed potatoes in a large pan of salted water
- Bring to the boil and then simmer for 15 minutes or until tender
- Drain the potatoes then return them to the pan
- Cook on a low heat for 1 minute, this dries out the potatoes
- Mash the potatoes
- Stir in the onion, peppers, coriander, seasoning, garlic, cumin, cheese and flour
- Form into small patties using about 1 tablespoon of mixture
- Chill in the fridge for 30 minutes
- Add a drizzle of olive oil in a shallow pan over a medium heat
- Cook the patties for 2 minutes on each side or until golden and crisp
- Serve immediately with a crisp salad
