Hello Everyone

Hope you are all having a peaceful Sunday morning. My traditional Sunday morning breakfast is always pancakes – I’m a self-confessed pancake addict. This morning I have developed a new recipe for banana peanut butter choc chip pancakes so thought I would share it with you all.

Yesterday was a busy but successful day for me, I made good progress towards getting my first book in print. The mock up is with the publisher and the online store front has all been set up so I’ll keep you posted.




  • 200ml dairy free milk
  • 1 medium sized banana, mashed
  • 85g peanut butter
  • 1 egg
  • 1 tablespoon olive oil
  • 200g gluten free self raising flour
  • 1 tablespoon caster sugar
  • 40g dairy free chocolate chips


  1. In a large bowl whisk together the milk, mashed banana, peanut butter and olive oil
  2. Stir in the flour, caster sugar and chocolate chips
  3. Gently cook each pancake for a couple minutes each side in a large shallow pan with a drizzle of olive oil over a medium heat
  4. I added 2 tablespoons of pancake batter to make 10 large pancakes
  5. I topped my pancakes with some extra chocolate chips, a drizzle of melted peanut butter and some dairy free chocolate sauce
