serves / makes 2

  • 200ml dairy free cream
  • 1 avocado
  • pinch of chilli flakes

  • 1 garlic clove, minced
  • 150g gluten free pasta
  • 3 tablespoons sundried tomatoes
  • 2 teaspoons oregano
  • 1 tablespoons dairy free cheese, grated
  • salt and pepper

  1. Mash the avocado until smooth
  2. Cook the pasta per the instructions on the packet
  3. Saute the onion, chilli and garlic in the olive oil over a medium heat for a couple of minutes
  4. Pour in the dairy free cream, add the oregano and season with salt and pepper
  5. Cook for a couple of minutes
  6. Stir through the avocado, sundried tomatoes and pasta
  7. Divide between two bowls and top with the dairy free cheese

  1. Have you ever tried nutritional yeast in dishes? I’ve read that it offers a sort of cheesy flavour when there’s no cheese but I’m not sure how accurate that is! If it works, I was wondering whether it would be nice in the creamy sauce.
