Ingredients

  • 5 medium apples, peeled, cored and cut into small chunks
  • 3 eggs
  • 250g caster sugar
  • 175ml vegetable oil
  • 2 teaspoons ground cinnamon
  • 250g gluten free self raising flour
  • 4 tablespoons fresh raspberries

Method

  1. Preheat the oven to 180 oC
  2. Grease an 8″ by 8″ square cake tin
  3. Whisk together the eggs, caster sugar and oil
  4. Stir in the cinnamon, flour, apple chunks and raspberries
  5. Pour into the cake tinned bake for 55 minutes
  6. Allow to cool and then cut into squares
