Ingredients
- 5 medium apples, peeled, cored and cut into small chunks
- 3 eggs
- 250g caster sugar
- 175ml vegetable oil
- 2 teaspoons ground cinnamon
- 250g gluten free self raising flour
- 4 tablespoons fresh raspberries
Method
- Preheat the oven to 180 oC
- Grease an 8″ by 8″ square cake tin
- Whisk together the eggs, caster sugar and oil
- Stir in the cinnamon, flour, apple chunks and raspberries
- Pour into the cake tinned bake for 55 minutes
- Allow to cool and then cut into squares
