Morning everyone
Hope you are all having a lovely weekend. Got a busy few days ahead with website stuff – still working on finishing my Cake book, working on the logistics of getting my first book sold in print form and I head down to London for the Allergy and Free From Show.
You all know how much I love my pancakes so thought I would share with you this little recipe I made for breakfast this morning.

Ingredients
- 100g gluten free self-raising flour
- 1 tablespoon caster sugar
- 1 egg
- 100ml dairy free milk
- 1 small red apple, peeled, cored and cut into small cubes
- maple syrup for topping
Method
- In a large bowl stir together the flour and caster sugar
- Beat the egg and stir into the flour mix
- Gradually whisk in the milk until you have a smooth batter
- Stir in the little apple pieces
- Heat a drizzle of oil in a shallow pan over a medium heat
- Add a quarter of the mix into the pan and cook for a couple of minutes on each side
- Repeat until you have cooked all the pancakes
- Top with the maple syrup
