Strawberry and Lemon Muffins

  • 150 g caster sugar
  • 150 g dairy free spread
  • 3 eggs
  • 150 g gluten free self raising flour
  • zest of one lemon
  • 120 g strawberries chopped


  • Preheat the oven to 180 oC
  • Line a muffin tray with paper cases
  • Whisk together the caster sugar and dairy free spread until light and fluffy
  • Beat in each egg one at a time
  • Fold in the gluten free flour, lemon zest and strawberry pieces
  • Divide the mixture between six muffin cases
  • Bake for 25 minutes
  • Allow to cool before enjoying
