Serves 6


  • 2 tablespoons jam
  • 115g dairy free spread
  • 115g caster sugar
  • 2 eggs
  • 175g gluten free self raising flour
  • 2 tablespoons dairy free milk


  1. Grease a 1.2 litre pudding dish
  2. Spoon the jam into the base of the pudding dish
  3. Beat together the dairy free spread and caster sugar until light and fluffy
  4. Whisk in the eggs one at a time
  5. Stir in the flour and dairy free milk
  6. Pour into the pudding basin
  7. Cover the tip with a circle of grease proof paper and cover with tinfoil
  8. Place the pudding dish in a large saucepan half filled with boiling water
  9. Cover with a lid and simmer gently for 1 hour and 30 minutes
  10. Remove the sponge from the basin and serve with some extra jam and custard
