Ingredients
- 1 tbsp olive oil
- 1/2 yellow pepper finely diced
- 1 small onion sliced
- 1 garlic clove minced
- 1 tsp smoked paprika
- 1 tsp Sriracha or other hot sauce
- 200 ml passata
- 350 ml vegetable stock
- 1 tsp basil
- 1/2 tsp thyme
- salt and pepper for seasoning
- 60 g rice
- 150 g prawns peeled and prepped
Instructions
- Add the olive oil into a saucepan over a medium heat
- Saute the pepper, onion and garlic for 5 minutes
- Stir in the sriracha, paprika, passata, vegetable stock, basil and thyme
- Bring to the boil
- Stir in the rice and simmer for 8 minutes
- Add in the prawns and cook for another 5 minutes or until the rice and prawns are cooked
- Season to taste
- Divide between two bowls and serve
