Makes 8 muffins


  • 150g dairy free spread
  • 150g caster sugar
  • 150g gluten free self raising flour
  • 3 eggs
  • 1 mango, peeled and chopped into small pieces
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon mixed spice


  1. Preheat the oven to 180 oC
  2. Line an 8 hole muffin tin with paper cases
  3. Beat together the dairy free spread and caster sugar until light and fluffy
  4. Beat in the eggs one at a time
  5. Stir in the flour, mango pieces, cinnamon and mixed spice
  6. Divide between the 8 muffin cases
  7. Bake in the oven for 25 minutes
  8. Allow to cool before enjoying
