Ingredients
- 50 g brown sugar
- 100 g honey
- 60 ml dairy free milk
- 60 ml fresh orange juice
- 3 eggs
- zest of one lemon
- zest of one orange
- 200 g gluten free self raising flour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 80 g sultanas
Instructions
- Preheat the oven to 160 oC
- Grease and line a 900g loaf tin
- Place the honey, orange juice and milk in a saucepan and warm until melted and combined
- In a large bowl whisk together the brown sugar and eggs
- Pour in the honey mix
- Stir in the lemon zest, orange zest, gluten free flour, ginger, cinnamon and sultanas
- Bake for an hour
- Allow to cool before slicing - I served mine dusted with a little icing sugar and some dairy free spread
