Smoked Sausage Gumbo

Ingredients

  • 1 tbsp olive oil
  • 100 g smoked pork sausage sliced
  • 1 onion chopped
  • 1 green pepper chopped
  • 2 cloves garlic minced
  • 1 tsp dried basil
  • 400 ml chicken stock
  • 400 g chopped tomatoes
  • 1 tsp hot sauce I used sriracha
  • 100 g brown rice

Instructions

  • Heat the oil in a large pan over a medium heat
  • Add in the smoked sausage, onion, pepper, garlic and basil
  • Saute for 5 minutes
  • Add the chicken stock, chopped tomatoes, rice and hot sauce
  • Bring to a boil
  • Reduce the heat so the soup is simmering and cook for 25 minutes or until the rice is tender
  • Split between four bowls and serve
