Serves 4


  • 4 gammon shanks
  • 335ml apple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 apples, peeled, cored and chopped into small pieces
  • 15g dairy free spread


  1. Place the gammon shanks and 100ml of apple juice in the slow cooker
  2. Cook on low for 7 hours
  3. Preheat the oven to 180 oC
  4. Place the gammon shanks in a casserole dish
  5. Make the apple glaze by placing the remaining apple juice, 1 tablespoon of brown sugar and cornstarch in a small saucepan
  6. Bring to the boil and simmer for a couple of minutes until thickened
  7. Pour over the gammon
  8. Place the other tablespoon of brown sugar, the dairy free spread and apples into a small saucepan
  9. Cook over a medium heat until soft
  10. Add to the casserole dish
  11. Bake in the oven for 10-15 minutes
  12. Serve with fries and a green salad
