Ingredients
- 70g gluten free pasta
- 1 onion, diced
- 4 cherry tomatoes, quartered
- 1 teaspoon oregano
- 6 eggs
- 1 gluten free sausage
- 1 tablespoon grated dairy free cheese
- 1 garlic clove, minced
- salt and pepper, for seasoning
Method
- Cook the pasta per the instructions on the packet
- Grill the sausage for 10-12 minutes then cut into small slices
- Saute the onion and garlic
- Beat together the eggs in a large bowl
- Stir in the tomatoes, pasta, onion, sausage, cheese and season with salt and pepper
- Add to the frying pan and cook gently for 10-15 minutes
- Grill the top for 5 minutes
- Serve cut into slices
