Gluten and Dairy Free Sausage Casserole

  • 1 tbsp olive oil
  • 8 gluten free sausages
  • 1 onion chopped
  • 1 pepper chopped
  • 1 tsp Oregano
  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • pinch of chilli flakes
  • 400 g chopped tomatoes
  • 450 ml vegetable stock
  • 200 g brown rice
  • salt and pepper for seasoning


  • Add the olive oil to a large pan over a medium heat
  • Add the sausages and cook until the skin is roasted, about 10 minutes
  • Remove from the pan and set aside
  • Add the onion, peppers, oregano, garlic, paprika and chilli flakes
  • Sauté for 8 minutes
  • Stir in the chopped tomatoes, stock, rice and seasoning
  • Bring to the boil then reduce to a simmer
  • Add the sausages back into the pan
  • Simmer for 25 minutes or until the rice is cooked

    Delicious! I found that the rice took about 40 mins, perhaps because I was cooking for two and just cut down on stock rather than halving tomatoes. We ate with broccoli as we haven’t found a good gluten free bread without yeast yet.
