For the cake:

  • 225 g dairy free spread
  • 225 g caster sugar
  • 4 eggs
  • 2 tsps red food gel
  • 1 tbsp cocoa powder
  • 225 g gluten free self raising flour
  • 30 ml dairy free milk
  • 1 tsp lemon juice

For the frosting:

  • 400 g dairy free cream cheese
  • 100 g dairy free cream cheese
  • 250 g icing sugar
  • 1 tsp vanilla extract


  • Preheat the oven to 180 oC
  • Greas and line two 8" round cake tins
  • Stir together the lemon juice and dairy free milk and set aside
  • Cream together the dairy free spread and caster sugar until light and fluffy
  • Beat in the eggs one at a time
  • Stir in the red food gel, cocoa powder and gluten free self raising flour
  • Mix in the milk mixture
  • Divide between the two cake tins and bake for 35 minutes
  • Remove from the oven and allow to cool completely
  • Make the frosting by whisk together the dairy free cream cheese, dairy free spread, vanilla extract and icing sugar until light and fluffy
  • Use half the frosting to sandwich together the cakes and the rest for the top
