  • 250 g rice boiled per instructions on packet
  • 300 g prawns
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 red pepper diced
  • 100 g green beans sliced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground lemon grass
  • 2-3 tablespoons Red Thai curry paste
  • 400 ml coconut milk
  • 2 teaspoons lemon juice
  • salt and pepper for seasoning


  • Heat a drizzle of olive oil in a large pan over medium heat
  • Add the onion, pepper and green beans and cook for 5 minutes
  • Add the garlic, ginger, lemon juice, lemongrass and seasoning
  • Stir in the curry paste
  • Pour in the coconut milk and bring to a simmer
  • Stir in the prawns
  • Simmer for 5 minutes
  • Serve with the boiled rice
