Ingredients
- 200 g gluten free pasta
- 2 garlic cloves minced
- 1/2 green pepper diced
- 1 small onion diced
- 200 ml dairy free cream
- large handful of dairy free cheese
- large handful of spinach
- salt and pepper for seasoning
- 200 g bbq pulled pork *
Instructions
- Cook the gluten free pasta per the instructions on the packet
- Heat a drizzle of olive oil in a large shallow pan
- Stir in the garlic cloves, onion and pepper
- Sauté for 5 minutes
- Pour in the cream and simmer for a couple of minutes
- Season with salt and pepper
- Stir in the grated cheese and spinach
- Cook for another minute
- Stir in the cooked pasta and serve topped with warm bbq pulled pork
