  • 1 tbsp oil
  • 150 g prawns peeled and prepped
  • 3 tsps tom yum paste
  • 800 ml vegetable stock
  • large handful shredded stir fry veg
  • few drops sriracha
  • 1 tsp brown sugar
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp fresh chopped coriander
  • salt and pepper for seasoning


  • Place the oil in a pan over a medium heat
  • Add in the veg and stir fry for a couple of minutes
  • Add in the tom yum paste and cook for 1 minute
  • Pour in the vegetable stock and simmer for 5 minutes
  • Add in the prawns, sriracha, sugar, lime juice and fish sauce
  • Cook for 5 minutes
  • Add in the coriander and season to taste
