Prawn Tom Yum Soup
A fragrant Thai soup with prawns and vegetables

Ingredients
- 1 tbsp oil
- 150 g prawns peeled and prepped
- 3 tsps tom yum paste
- 800 ml vegetable stock
- large handful shredded stir fry veg
- few drops sriracha
- 1 tsp brown sugar
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp fresh chopped coriander
- salt and pepper for seasoning
Instructions
- Place the oil in a pan over a medium heat
- Add in the veg and stir fry for a couple of minutes
- Add in the tom yum paste and cook for 1 minute
- Pour in the vegetable stock and simmer for 5 minutes
- Add in the prawns, sriracha, sugar, lime juice and fish sauce
- Cook for 5 minutes
- Add in the coriander and season to taste
