Ingredients
- 2 gluten free chicken sausages, I got mine in M&S
- 250g new potatoes, halved
- 1 small onion, diced
- 1 pepper, sliced
- 1 garlic cloves
- 1 teaspoon smoked paprika
- 1 avocado, peeled and sliced
- pinch of chilli flakes, optional
- salt and pepper for seasoning
Directions
- Place the potatoes in a pan of salted boiling water for 10 minutes or until tender, drain and set aside
- Slice the chicken sausages into rings
- In a shallow pan over a medium heat add a drizzle of olive oil
- Add in the garlic, paprika, onion, pepper and the sausages
- Saute for 5 minutes
- Add in the potatoes and sauté for 10 minutes
- Season to taste with salt and pepper
- Divide between two bowls and top with the sliced avocado and chilli flakes
