Potato, Bacon and Cabbage Bake

  • 2 medium sized potatoes peeled and finely sliced
  • 1/2 small white cabbage shredded
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1 small onion diced
  • 4 slices smoked bacon chopped
  • 250 ml dairy free cream
  • 2 tbsps dairy free cheese grated
  • salt and pepper for seasoning


  • Preheat the oven to 180 oC
  • Parboil the potato slices for 5 minutes, drain and set aside
  • Place the olive oil in a shallow pan over a medium heat
  • Saute the onion, garlic, bacon and cabbage for 5 minutes
  • Season to taste
  • In a casserole dish layer the potatoes and cabbage mix
  • Pour the dairy free cream into the casserole dish and sprinkle on the grated dairy free cheese
  • Bake in the oven for 30 minutes
