Ingredients
- 2 medium sized potatoes peeled and finely sliced
- 1/2 small white cabbage shredded
- 1 tbsp olive oil
- 1 garlic clove minced
- 1 small onion diced
- 4 slices smoked bacon chopped
- 250 ml dairy free cream
- 2 tbsps dairy free cheese grated
- salt and pepper for seasoning
Instructions
- Preheat the oven to 180 oC
- Parboil the potato slices for 5 minutes, drain and set aside
- Place the olive oil in a shallow pan over a medium heat
- Saute the onion, garlic, bacon and cabbage for 5 minutes
- Season to taste
- In a casserole dish layer the potatoes and cabbage mix
- Pour the dairy free cream into the casserole dish and sprinkle on the grated dairy free cheese
- Bake in the oven for 30 minutes
