  • 200 g gluten free pasta cooked per instructions on the packet
  • 1 yellow pepper sliced
  • 1 red pepper sliced
  • 1 red onion sliced
  • 12 cherry tomatoes halved
  • 2 garlic cloves minced
  • 1 tbsp fresh parsley chopped
  • 2 tbsps balsamic vinegar
  • drizzle of olive oil
  • salt and pepper for seasoning


  • Place the olive oil and peppers in a shallow pan over a low heat
  • Cover and cook for 15 minutes
  • Add in the onion, cherry tomatoes, garlic, parsley, balsamic veingar and seasoning
  • Cook for another 15 minutes
  • Stir in the cooked gluten free pasta and season to taste
  • Divide between two bowls and serve
