Gluten and Dairy Free Mincemeat Cheesecake

Ingredients

  • 200 g gluten free digestie biscuits crushed
  • 100 g dairy free spread melted
  • 6 tbsps Christmas mincemeat
  • 220 g dairy free cream cheese
  • 80 g icing sugar
  • 200 ml dairy free whipping cream *
  • zest of one orange

Instructions

  • Mix together the crushed biscuits and melted dairy free spread
  • Press into the bottom of a 7" round flan tin
  • Top with the Christmas mincemeat
  • Whisk the dairy free cream until light and fluffy
  • Whisk together the dairy free cream cheese and icing sugar
  • Fold in the dairy free whipped cream
  • Spread on top of the mincemeat
  • Chill in the fridge for at least 4 hours
  • Top with orange zest prior to serving, I also added some Christmas tree sprinkles

Notes

* you can buy dairy free whipping cream online or at your local health store, I usually use SoyaToo - they make a soya milk and rice milk versionĀ
